The Brewing Procedure

Our maxim is not the German law of beer purity law as such, but rather the knowledge of excellence and quality of a beer that is brewed according to the basic principle of the beer purity law when it is enhanced with the best traditional raw materials brewed by technical expertise.

Our brewing water originates from a spring located in the prehistoric rocks of the Fichtelgebirge “Pine Mountains”. The natural water is true and pure, free of impurities and does not undergo reprocessing treatments. As good beer brewers, the parameters that we set to the quality of brewing water are higher than those required by law. In addition, we select malt from quality-conscious, respected malt factories. This is the basic principle of beer brewing.

After its preparation in the mash pan, the mash is separated in the fermentation vat into beer wort and spent grain.

Next, the hops, which we select and buy following the strictest criterion, are added to the beer wort. Here it is the knowledge and the know-how of the brew master, through correct dosage, mixing and cooking, that will determine the final taste of the beer.

After cooling to cellar temperature, yeast is added to the cooled wort and the primary fermentation occurs in the fermentation cellar. It takes approximately 6 to 8 days for the yeast to convert the malt sugar into alcohol and carbon dioxide.

The post fermentation takes place in the lagering cellar over the course of several weeks, resulting in the ripening of the green beer, of which we are very proud.

In the history of beer, the production of beer was always monitored by higher authorities. The most known and most famous German beer purity law goes back to the year 1516. It was decreed by the Bavarian Duke Wilhelm the Fourth. Today it is still valid in its original and concise version,

only barley, hops and water may be used for brewing beer! - This is what the law says. In the past, yeast was taken from the air. Today, it is available and is added as raw material in the brewing process, which does not alter the purity in any way.

The art and know-how of the brew master is to produce the drink, which is so valued in the whole world, out of three raw materials: water, hops and yeast. Bavarian beer, in particular, reflects this tradition and history. Today as well, in our modern world, people love pubs with a Bavarian rural flair in which good beer is keg tapped.  As the composer Max Reger once said: "... Eating and having a good conversation with good friends in the evening while enjoying a glass of beer changes ones thoughts and pacifies the soul and the heart”.
